な背景の上に形づくられてくる食の質にかかわる議論が高まっている。そうした研究動向を踏
まえて、本研究では日本とインドの大学生を対象として、食の質に対する認識の差異を検討す
る。具体的にはインドUP州のKNPGカレッジと日本の山口大学の学生を対象に、コンヴァンシオン経済学において提示された観点をふまえたアンケート調査をおこなった。双方の大学からほぽ同年齢の学生80名程度の回答を得て、その結果を分析した。インド側と日本側との回答の共通点と相違点から、双方の食の質に対する認識を考察し、双方において食品情報の果たす役割の重要性、品質の判断にかかわって依拠する基準の違いなどが明らかになった。
Food quality has been hotly discussed not only from the viewpoints of food science and nutrition science, but also based on its social, economical, cultural, and traditional aspects. Considering such a research trend, we conducted this study of Japanese and Indian students to examine their cognitive differences related to food quality. Concretely, with students of KNPG College in UP, India and those of Yamaguchi University in Japan, we conducted a questionnaire survey based on the viewpoint suggested in the economics of convention. We obtained 80 responses from similarly aged students of each university. The knowledge we obtained is the following. Although the overwhelming majority of Indian students selected type 2, the answer most selected by Japanese students was type 3, followed by type 2. Although type 5 was selected by Indian students to some degree, few Japanese students selected it. In turn, type 3, which was popular among Japanese students, was selected by few of the Indian. In terms of common and different points, we examined the recognition of food quality by each university's students to ascertain the importance of the role played by food information and the difference of criteria on which each country's judgment of food quality depends.
